Cloudy Beverage Systems
Flavor systems for
dense, cloudy drinks are made primarily from cloudy fruit juice concentrates (e.g. citrus, esp.
orange juice concentrates), but can also be from puree concentrates and simple purees. In addition
to the fruit-juice flavor systems, the final product, depending on its type, may contain flavor
enhancers such as flavors. For an appealing look, i.e. uniform cloudiness without sedimentation or
an oil ring, natural stabilizers such as pectin and locust bean gum are used and in many cases
fruit and plant extract colorings, such as black carrot, help stabilize the color of the beverage.
