Emulsion Systems
Emulsion drinks with or
without carbonation are particularly popular in the eastern European markets. An emulsion is a
homogenous mixture of two components that cannot be mixed uniformally. Technical methods and the
use of mixing aids such as emulsifiers help to stabilize this combination. One well-known example
of a natural emulsion is milk, which is a natural mixture of fat and emulsified protein.
In the beverage world, emulsions can be used for a variety of purposes. Cloudy emulsions, provide color and flavor to cloudy drinks. Neutral emulsions which are based on plant oils optimize the cloudiness and the drink's mouth-feel and appeal. All emulsions are easy-to-use and do not require any additional stabilization steps.
