The use of fruit flavors in sweet baked goods continues to be a trend throughout Europe and the number of successful innovations on the baked goods market is proof enough. From January to December 2007, there were 327 new fruit-flavored sweet baked items introduced on the European market and 2008 saw another 369 which represents an increase of 12.8 percent (source: Mintel).
The delicious taste and fruity aroma especially whet consumer appetites, but fruit flavors in cookies were prone to dissipate relatively quickly once the package was opened.

In addition to the traditional lemon flavor, strawberry and orange are the favorites for fruity baked confectionery. Between August 2007 and July 2008, 30 lemon-flavored baked products were introduced on the European market, followed by 24 products with strawberry and 15 with orange (source: Mintel).
