WILD at the FIE 2011 - Natural flavors and colors for marshmallows (05.12.2011)
Marshmallows are very popular as a sweet treat. WILD is now offering manufacturers a broad
spectrum of natural flavors and coloring foodstuffs for this popular confectionery item – creating
an appetizing color and a great taste.
WILD works with coloring foodstuffs such as safflower, elderberry and colors from
natural sources to tint marshmallows. These water-soluble, natural products let manufacturers
produce marshmallows in reds, oranges and yellows, which creates more variety in the market
segment.
“Adding coloring foodstuffs to products that are aerated or foamed yields a nice pastel
shade. The challenge for product developers was determining the correct dosage for different
shades. Among other things, this depends on aeration strength while the colors must be suitable for
the application in question. They cannot have a defoaming effect,” says Hélène Möller, Ingredients
Product Manager at WILD. The application specialists at WILD have succeeded in mastering these
technological challenges. The company can offer products which meet the high standards of both
manufacturers and consumers.
Not only is the color of a product important, it must have good flavor – naturally. In Paris,
WILD will present its new natural flavors for marshmallows. Raspberry, lemon, cherry and vanilla
flavors are available, creating a wide selection of tasty and fruity marshmallow products.
